Stuffed Bell Peppers
4 bell peppers, sliced in half and de-seeded
2 lbs mild sausage smoked on grill or prepared normally.
5 roasted jalapenos
4 cloves roasted garlic
1/2 roasted onion (Vidalia preferred)
1 8oz pack shredded cheddar (sharp)

Crumbled Smoked Sausage
Roasted Jalapeno's....Sprinkle lightly with olive oil and salt, wrap in foil and roast on the grill away from coals about 30 minutes.
Roasted Garlic prepared the same way as the peppers and Vidalia onion below.
Chop peppers, onion and garlic in food processor then stir into sausage along with cheddar cheese.Mix all ingredients and fill the bell pepper halves then grill over low to medium heat with the lid closed until the pepper skin blisters and cheese melts, let cool then slice each piece in half and serve, makes 16 pieces.
Here they are stuffed and ready for the grill.
