Sweet Chicken Bacon Wraps
The original recipe for this came from Miss Paula Deen but I made a few minor adjustments.
2-3 lbs boneless chicken breasts cubed
1 lb bacon cut into thirds
1 cup light brown sugar
1/4 cup chili powder
2 teaspoons liquid smoke

First of all cut 2-3 lbs of boneless chicken breasts (or strips and cut into bite sized cubes (about 1 inch).
Paula's recipe says to wrap in bacon and dredge in sugar and chili powder mixture but I decided to dump the chicken cubes into a big mixing bowl, sprinkle with the dry ingredients, add the liquid smoke and mix it all up by hand to coat it evenly. Then I wrap the chicken in bacon and refrigerated for 2 hours to let the flavors soak in.
This is the brown sugar and chili powder.
I smoked them at 300 degrees for 1 hour using indirect heat.
And here they are ready to eat. They make a great appetizer!
